Apple Prosciutto Salad

I haven't always been a big fan of salads. Lately though I've been experimenting with combinations of fruit and veggies, sweet and salty, tangy and spicy, etc. etc. Adding fruit to a normally veggie dominated dish is my new favorite thing. Obvious? Maybe. But it's really sparked a new interest in things (read: salads) that I never found interesting before. Here's one I made (and very much enjoyed) just the other day! The sweet, crisp apples contrast with the salty prosciutto and pungent extra sharp cheddar to make a delicious combination of flavors. Enjoy!
Apple Prosciutto Salad
Serves: 1

2 cups butter lettuce torn into bite-size pieces
1/2 Braeburn apple, thinly sliced
1/4 ounce shredded extra sharp white cheddar
1 slice prosciutto, torn into small pieces
2 TBL shallots, thinly sliced
1 TBL Lite Champagne Dressing (Trader Joe's brand is gooood!)
Black Pepper to taste

Layer the lettuce on a dinner sized plate. Spread the apples, cheddar, prosciutto, and shallots on top of the lettuce then drizzle with dressing and sprinkle with black pepper. Et voila! Delicious and super easy to throw together for a light lunch or a first course before dinner.
