Breakfast! It's my favorite meal to prepare and to eat. Lately a friend of mine has been hooking me up with some delicious free range eggs from locally raised chickens and it's been the basis for most of my breakfasts. The other day I decided to whip up some breakfast sandwiches with whatever other ingredients I happened to have in the fridge. This is what resulted:
Apple Brie Breakfast Sandwiches
2 whole wheat english muffins
2 ounces brie
1/2 apple (honeycrisp is my favorite), sliced
2 slices bacon
1. Cook bacon until crisp. Remove from pan. Add apple slices to bacon grease and saute til slices are crisp tender. Remove from pan and drain some of the bacon grease leaving just enough to fry eggs.
2. Cook eggs as desired (fried, scrambled, whatever!).
3. Toast english muffins and spread with a little dijon. Add an ounce of brie to each muffin. Arrange apple slices on top of the brie and sprinkle with fresh thyme. Add egg and one slice of bacon to each sandwich and then...consume!!!
