This is hands down my favorite salad/dressing recipe. You can serve it as a side or add chicken and some crusty whole grain bread to make it a full meal. Substitute whatever fruit is in season (peaches, apples, or raspberries would be good too) and enjoy a delicious combination of tangy dressing, smoky bacon, and sweet fruit.
Spinach Salad with Warm Bacon Vinaigrette
3 slices bacon (applewood smoked is especially delish)
1/4 cup finely sliced shallots
2 TBL balsamic vinegar (white wine or champagne vinegar works well too)
1/3 cup chicken broth
1 TBL dijon mustard
1 TBL maple syrup
1 cup strawberries
6 cups spinach (arugula is also tasty)
8 oz. rotisserie chicken, chopped (or 2 cooked chicken breasts)
pepper to taste
1. Add bacon to pan and cook til crisp. Remove bacon from pan but reserve the drippings.
2. Add shallots to drippings in pan and cook til tender, scraping pan to loosen residual browned bits.
3. Stir in vinegar, broth, mustard, and syrup and cook for a couple of minutes until mixture thickens a bit. Remove from heat.
4. Arrange 1 1/2 cups spinach on each plate. Top each serving with strawberries and chicken. Drizzle equal amounts of dressing over each serving and top with crumbled bacon and a sprinkle of black pepper.
Serve this with a wedge of multi-grain bread and a bit of extra sharp white cheddar and you have a fantastic, filling meal!
